Creamy carrot and coriander soup

Christmas is the perfect time to treat yourself, and your guests to some quality home cooked food.

Begin your festive feast by making this delicious creamy carrot and coriander soup. Not only will your guests be impressed before the main course, but it’s also a really quick and easy process, meaning you can concentrate on the more important things this Christmas day.

Ingredients:
• 1kg of thinly sliced, peeled carrots
• 2 medium sized potatoes, thinly sliced and peeled
• 1 shallot, peeled and sliced thinly
• 1 litre hot chicken stock
• 2 tablespoons chopped fresh coriander
• ½ teaspoon salt
• ¼ teaspoon freshly ground black pepper
• 125ml single cream
Garnish – chopped fresh coriander
 
Cooking:
 
Put all the prepared vegetables into the casserole with the stock, coriander and seasonings. Bring to the boil then cover and simmer for 30 – 40 minutes until all the vegetables are very tender. Remove the lid and cool slightly.
Transfer the soup to a blender or food processor and process until smooth. Return to the casserole and reheat.
Stir in the cream. Garnish with fresh coriander.
